5c Crushed Blackberries (8c Whole)

1 box Regular Powdered Fruit Pectin

6 1/3c Granulated Sugar, Divided

1/2tsp Butter (optional)

Directions

Prep jars and lids in boiling Water.
Pour berries in 8qt stock pot. In small bowl, mix pectin and 1/4c sugar. Gradually stir into fruit. Add butter if using. Bring fruit to full rolling boil over med-high heat, stiring constantly. Gradually stir in remaining sugar. Return to full rolling boil. Stir for 1 miute.
Remove heat and skim off any foam. Let cool in pot 5 minutes stirring occasionally.
Laddle into hot jars, leaving 1/4" headspace. Remove air bubbles. Wipe rims and threads with damp paper towle. Center lids and screw band till fingtip tight. Place jars in water bath canner and cover with 1" water.
4-8oz Jars Process 10 minutes
1 pint Jars Process 15 minutes
Remove and set on wire rack or cloth for 24 hours. Check lids for seals. Store cool, dry dark place.
